Berry meringue crush

Known as ‘Eton Mess’ in England, this recipe is literally whipped together in seconds from cream, meringues and fresh berries. It is best served on the day of making.

Ingredients

1 cup (250 ml) whipping cream

1 T (15 ml) castor sugar

100 g meringues or macaroons

400 g fresh berries, hulled and sliced if large

fresh mint to garnish

Method

In a mixing bowl, whip together the cream and castor sugar until soft peaks form. Do not overbeat – the cream should be light and mousse-like.

Break the meringues or macaroons into large chunks and stir lightly into the cream.

Follow suit with the berries, stirring lightly until more or less blended – it should not be smooth.

Spoon into attractive glasses or serving bowls and garnish with fresh mint. You can either serve immediately or chill for 30 minures before serving.
